Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, blend the softened unsalted butter until creamy.
- Gradually mix in the sugar until well combined.
- Add the all-purpose flour and mix until the mixture is combined.
- Press 2/3 of this mixture into the bottom of a greased baking pan.
- Spread the raspberry jam over the pressed shortbread base.
- Crumble the remaining dough over the raspberry jam.
- Bake for 30 minutes or until golden brown.
- Allow to cool completely before cutting into bars.
Notes
Serve these bars with a scoop of vanilla ice cream or a dollop of whipped cream for an extra treat. For a fun twist, sprinkle powdered sugar on top before serving.
