Ingredients
  

Shortbread Base
  • 1 cup unsalted butter, softened Make sure the butter is softened for easier blending.
  • ½ cup sugar
  • 2 cups all-purpose flour Can be substituted with gluten-free flour if desired.
Raspberry Layer
  • 1 cup raspberry jam Use high-quality jam for best flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, blend the softened unsalted butter until creamy.
  3. Gradually mix in the sugar until well combined.
  4. Add the all-purpose flour and mix until the mixture is combined.
  5. Press 2/3 of this mixture into the bottom of a greased baking pan.
  6. Spread the raspberry jam over the pressed shortbread base.
  7. Crumble the remaining dough over the raspberry jam.
  8. Bake for 30 minutes or until golden brown.
  9. Allow to cool completely before cutting into bars.

Notes

Serve these bars with a scoop of vanilla ice cream or a dollop of whipped cream for an extra treat. For a fun twist, sprinkle powdered sugar on top before serving.
