Ingredients
  

For the custard
  • 2 cups chopped fresh rhubarb Choose firm, fresh rhubarb.
  • 1 cup sugar Adjust to taste for sweetness.
  • 1 cup milk Any type of milk can be used.
  • 2 large eggs Large eggs preferred.
  • 1/2 cup all-purpose flour Provides structure to the custard.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Prepare a baking dish by greasing it lightly.
  3. Chop the rhubarb into small pieces and set it aside.
  4. In a bowl, mix the sugar and flour.
  5. Add eggs and milk to the sugar mixture and whisk until smooth.
  6. Stir in the chopped rhubarb and pour the mixture into the prepared baking dish.
  7. Bake for 40-45 minutes or until the custard is set and lightly golden on top.
  8. Let it cool before slicing into bars.

Notes

Store the bars in an airtight container in the refrigerator for up to a week. They can also be frozen for longer storage.
