Preparation
- Preheat your oven to 350°F (175°C).
- Prepare a baking dish by greasing it lightly.
- Chop the rhubarb into small pieces and set it aside.
- In a bowl, mix the sugar and flour.
- Add eggs and milk to the sugar mixture and whisk until smooth.
- Stir in the chopped rhubarb and pour the mixture into the prepared baking dish.
- Bake for 40-45 minutes or until the custard is set and lightly golden on top.
- Let it cool before slicing into bars.
Notes
Store the bars in an airtight container in the refrigerator for up to a week. They can also be frozen for longer storage.
