Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the baby potatoes thoroughly. Cut them in half if they are larger.
  3. In a large bowl, mix the olive oil, minced garlic, thyme, basil, salt, and pepper.
  4. Add the potatoes to the bowl, and toss until they are well coated.
  5. Spread the potatoes out on a baking sheet in a single layer.
  6. Roast in the preheated oven for about 25-30 minutes, or until they are golden brown and tender, flipping once halfway through.
  7. Serve hot and enjoy your flavorful roasted baby potatoes.

Notes

Use fresh herbs for the best flavor. Cut potatoes into uniform sizes for even cooking. For extra crispiness, broil them for the last few minutes of baking. Store leftovers in an airtight container in the fridge for up to three days.
