  • 1 lb sausage Good quality sausage is recommended.
  • 6 large eggs Whisk together with milk.
  • 1 cup milk Whole milk enhances creaminess.
  • 1 cup cheese Your choice, cheddar or mozzarella recommended.
  • 4 cups diced bread Use stale bread for better texture.
  • to taste salt and pepper Season the egg mixture well.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the sausage over medium heat until browned, breaking it into small pieces.
  3. In a bowl, whisk together the eggs and milk, then season with salt and pepper.
  4. Layer the bottom of a baking dish with the diced bread.
  5. Spread the cooked sausage evenly over the bread.
  6. Pour the egg mixture over the top, and sprinkle with cheese.
Baking
  1. Bake in the preheated oven for about 30 to 40 minutes until the edges are golden and the middle is set.
  2. Let it cool slightly before slicing into squares.

Notes

To make ahead, prepare without baking, store in the fridge, and bake straight from the fridge, adding extra minutes if needed. Experiment with different cheeses and consider topping with fresh herbs or avocado before serving.
