Preparation
- Preheat your oven to 400°F (200°C).
- Wash and peel the sweet potatoes, then cut them into bite-sized cubes.
- Place the sweet potato cubes on a baking sheet and drizzle with olive oil. Season with salt and pepper to taste and toss well.
- In a separate bowl, mix minced garlic, honey, soy sauce, and a bit of olive oil until well combined.
- Slice the sausage into rounds and add them to the baking sheet with sweet potatoes.
- Pour the honey garlic sauce over the sausage and potatoes and toss everything to coat.
Cooking
- Bake in the preheated oven for about 25-30 minutes, stirring halfway through, until the sausage is crispy and the sweet potatoes are tender.
- Serve immediately, drizzling additional honey garlic sauce over the top if desired.
Notes
Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to 3 months. Reheat using a microwave or skillet.
