  • 2 large sweet potatoes Washed and peeled, cut into bite-sized cubes
  • 3 cloves garlic Minced
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil Plus extra for drizzling on sweet potatoes
  • to taste salt and pepper For seasoning

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel the sweet potatoes, then cut them into bite-sized cubes.
  3. Place the sweet potato cubes on a baking sheet and drizzle with olive oil. Season with salt and pepper to taste and toss well.
  4. In a separate bowl, mix minced garlic, honey, soy sauce, and a bit of olive oil until well combined.
  5. Slice the sausage into rounds and add them to the baking sheet with sweet potatoes.
  6. Pour the honey garlic sauce over the sausage and potatoes and toss everything to coat.
Cooking
  1. Bake in the preheated oven for about 25-30 minutes, stirring halfway through, until the sausage is crispy and the sweet potatoes are tender.
  2. Serve immediately, drizzling additional honey garlic sauce over the top if desired.
