  • 4 cups chopped romaine and radicchio Use for color and crispness.
  • 1 cup chopped cucumber
  • 1 cup halved cherry tomatoes
  • 1/2 cup chopped red onion
  • 1 cup chopped bell pepper
  • 1 cup cubes of provolone or mozzarella cheese Use provolone for more flavor.
  • 1/2 cup sliced salami or pepperoni Add for spice.
  • 1/2 cup sliced pepperoncini Optional, for tang.
  • 1/4 cup olives Optional, for extra flavor.
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt Adjust to taste.
  • 1/4 teaspoon black pepper Adjust to taste.
  • 1 teaspoon dried oregano
To Serve
  • 1/2 cup grated Parmesan cheese For topping.
  • 1 loaf crusty or garlic bread For serving.

Method
 

Preparation
  1. Wash and dry all greens, then chop them into small, bite-sized pieces.
  2. Chop cucumber, cherry tomatoes, red onion, and bell pepper into small pieces, keeping them uniform.
  3. Cut provolone or mozzarella into small cubes, and slice salami or pepperoni into thin strips.
  4. Toss the chopped greens, vegetables, cheese, and meat in a large bowl.
  5. Add sliced pepperoncini and a few olives if you like a tangy bite.
  6. Make a simple Italian dressing with olive oil, red wine vinegar, Dijon mustard, salt, black pepper, and dried oregano.
  7. Pour the dressing over the salad, toss well, and let it sit for five minutes so flavors blend.
  8. Serve on plates and add grated Parmesan on top.

Notes

For best results, chop ingredients to similar sizes and dry the greens well. Adjust dressing based on personal taste, and consider keeping dressing on the side if made ahead.
