Preparation
- Cook quinoa or brown rice according to package instructions.

- Season shrimp with salt, pepper, and garlic, then sauté in the heated pan until pink and cooked through.
- In a bowl, combine diced mango, red onion, cilantro, lime juice, and salt to create the mango salsa.
Assembly
- Layer cooked grains at the bottom of meal prep bowls.
- Add the sautéed shrimp on top.
- Finish with a generous scoop of mango salsa.
Notes
