Ingredients
  

For the Whipped Ricotta
  • 8 oz ricotta cheese Use light and creamy ricotta
  • 1-2 tbsp honey Plus more to finish
  • 1 tbsp lemon juice
  • pinch salt
For the Bruschetta
  • 4 ripe peaches, thinly sliced Use ripe but firm peaches
  • 1 baguette sliced and toasted Toast until light brown
  • 1 tbsp olive oil For brushing on the bread
  • Fresh basil leaves, torn
  • optional a little black pepper or flaky sea salt

Method
 

Preparation
  1. In a bowl, whip ricotta, 1 tbsp honey, lemon juice, and a pinch of salt until smooth and light.
  2. Brush baguette slices with olive oil and toast in a pan or oven until light brown.
  3. Thinly slice the peaches; pat dry with a towel if they are very soft.
Assembly
  1. Spread a spoonful of whipped ricotta on each toasted baguette slice.
  2. Top with 2-3 peach slices and add torn basil.
  3. Drizzle with honey and finish with a pinch of black pepper or flaky salt if desired.

Notes

For best texture, prepare peaches and ricotta just before serving. Adjust honey based on the tartness of the peaches.
