Preparation
- In a bowl, whip ricotta, 1 tbsp honey, lemon juice, and a pinch of salt until smooth and light.
- Brush baguette slices with olive oil and toast in a pan or oven until light brown.
- Thinly slice the peaches; pat dry with a towel if they are very soft.
Assembly
- Spread a spoonful of whipped ricotta on each toasted baguette slice.
- Top with 2-3 peach slices and add torn basil.
- Drizzle with honey and finish with a pinch of black pepper or flaky salt if desired.
Notes
For best texture, prepare peaches and ricotta just before serving. Adjust honey based on the tartness of the peaches.
