Main Ingredients
  • 2 pounds boneless chicken thighs or breasts Thighs are recommended for more flavor.
  • 1/2 cup honey
  • 1/2 cup low sodium soy sauce Use tamari for gluten-free option.
  • 1/4 cup ketchup or tomato sauce
  • 3 to 4 cloves garlic, minced Add more for a garlicky flavor.
  • 2 tablespoons brown sugar (optional) Adjust sweetness to taste.
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1/2 teaspoon black pepper
  • 1 tablespoon cornstarch Mixed with 2 tablespoons water for thickening.
  • 2 tablespoons water For mixing with cornstarch.
  • Sesame seeds for garnish
  • Chopped green onions for garnish

Method
 

Preparation
  1. Put the chicken in the slow cooker in a single layer.
  2. In a bowl, mix honey, soy sauce, ketchup, minced garlic, vinegar, brown sugar, and pepper until smooth.
  3. Pour the sauce over the chicken, ensuring it's covered.
Cooking
  1. Cook on low for 4 to 5 hours, or on high for 2 to 3 hours, until the chicken is very tender.
  2. Remove the chicken to a plate.
  3. Stir the cornstarch mixture into the sauce in the slow cooker.
  4. Turn the slow cooker to high, let the sauce thicken for 5 to 10 minutes, stirring occasionally.
  5. Put the chicken back into the thickened sauce, spoon the sauce over to coat.
Serving
  1. Garnish with sesame seeds and green onions, and serve warm.

Notes

Use thighs for more juiciness. Trim excess fat to prevent a greasy sauce. Adjust sweetness and tang according to preference. Great leftovers for meal prep.
