  • 2 pounds boneless, skinless chicken breasts Ensure they are thawed if previously frozen.
  • 1 cup rice Long-grain white rice is recommended.
  • 2 cups chicken broth Use low-sodium if preferred.
  • 1/4 cup lemon juice Freshly squeezed for best flavor.
  • 4 cloves garlic, minced Adjust according to preference.
  • 1 tablespoon thyme Dried or fresh.
  • 1 tablespoon rosemary Dried or fresh.
  • 1 tablespoon parsley Dried or fresh, for garnishing.

Method
 

Preparation
  1. Place the chicken breasts at the bottom of your slow cooker.
  2. In a separate bowl, mix the chicken broth, lemon juice, minced garlic, thyme, rosemary, and parsley.
  3. Pour the mixture over the chicken.
  4. Add rice on top of the chicken and broth mixture, spreading it out evenly.
Cooking
  1. Cover the slow cooker with a lid and set it to low for 6-8 hours or high for 3-4 hours.
  2. When time is up, check that the chicken is cooked thoroughly and the rice is tender.
Serving
  1. Fluff the rice using a fork before serving.
  2. Garnish with fresh herbs for extra flavor.

Notes

For added texture, consider adding vegetables like carrots, peas, or bell peppers. Serve with lemon wedges for brightness.
