Ingredients
  

For the Grits
  • 1 cup grits Use any preferred type of grits.
  • 4 cups water
  • 1 cup shredded cheese Cheddar or your choice.
  • 2 tablespoons butter
For the Shrimp
  • 1 pound shrimp, peeled and deveined Fresh shrimp is preferred.
  • 1 tablespoon chipotle chili powder Adjust to taste based on spice preference.
  • 1 tablespoon smoked paprika
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Lemon wedges for serving

Method
 

Preparation of Grits
  1. In a pot, bring the water to a boil. Slowly whisk in the grits, reduce heat to low, and cook for about 20-25 minutes, stirring occasionally until thickened.
  2. Once the grits are thick, stir in the cheese, butter, salt, and pepper. Keep warm.
Cooking the Shrimp
  1. In a large skillet, heat the olive oil over medium heat. Add garlic and sauté for a minute.
  2. Add the shrimp, chipotle chili powder, smoked paprika, salt, and pepper. Cook until the shrimp turns pink and opaque, about 4-5 minutes.
Serving
  1. Spoon the creamy grits into bowls and top with the smoky chipotle shrimp. Drizzle any remaining sauce from the skillet over the top.
  2. Serve with lemon wedges on the side.

Notes

Use fresh shrimp for the best flavor and texture. Make your grits ahead of time and reheat them when you’re ready to serve, just adding a splash of water or milk to loosen them up. Don’t forget to taste as you go, adjusting seasoning as needed.
