  • 1 cup cheese (cheddar, mozzarella, or mix) Fresh cheese elevates the flavor.
  • 1 1/2 cup of flour All-purpose flour is preferred.
  • 1 teaspoon salt Adjust to taste.
  • 1 teaspoon optional spices (herbs, paprika) Customize to your taste.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine the sourdough discard, cheese, flour, salt, and any optional spices.
  3. Mix until a dough forms.
Chilling
  1. Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes.
Baking
  1. Roll out the dough on a floured surface to about 1/8 inch thick.
  2. Cut into squares or desired shapes and place on a baking sheet.
  3. Bake for 15-20 minutes until crispy and golden.

Notes

Best enjoyed fresh. Store in an airtight container for up to a week. You can freeze the dough before baking for future use.
