Preparation
- In a large mixing bowl, combine the sourdough starter, honey, and water. Mix until smooth.
- Gradually add the flours and salt. Stir until a soft dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until it’s smooth.
- Place the dough in a lightly greased bowl, cover it, and let it rise in a warm place for about 1-2 hours, or until doubled in size.
- Once risen, punch down the dough and divide it into 8 pieces. Shape each piece into a ball and flatten slightly.
- Dust both sides with cornmeal and place on a parchment-lined baking sheet. Cover and let rise for another hour.
Cooking
- Heat a skillet or griddle over medium heat. Cook muffins for about 7-10 minutes on each side, or until golden brown and cooked through.
- Cool on a wire rack before serving.
Notes
Serve warm with butter and your choice of jam, honey, or toppings like avocado or eggs. For storage, keep in an airtight container for a few days or freeze them for longer storage.
