Dough Preparation
- In a bowl, mix sourdough starter, water, and flour until you have a shaggy dough.
- Cover and let rest for 20 minutes.
- Add salt and a little olive oil; fold the dough until smooth.
- Transfer the dough to an oiled pan and gently spread it with wet hands to fill the pan.
- Allow the dough to rise in a warm place for about 1 to 2 hours until it is puffed and light.
Toppings and Baking
- Press dimples into the dough with your fingertips.
- Drizzle additional olive oil over the dough and sprinkle with salt and herbs.
- Bake in a preheated oven for about 20 to 30 minutes or until the top is golden and crisp.
- Cool slightly, cut, and serve warm.
Notes
Use an active starter for best results; wet hands when spreading the dough to prevent sticking. Don't overproof the dough and preheat the oven well for a better crust.
