Preparation
- Preheat your oven to 375°F (190°C).
- In a bowl, mix together fresh spinach, cream cheese, mozzarella cheese, garlic powder, salt, and pepper.
- Take each chicken breast and carefully slice a pocket into the side. Stuff each pocket generously with the spinach mixture.
- Use toothpicks to seal the openings of the chicken breasts to keep the stuffing from spilling out.
- Season the outside of the chicken breasts with olive oil, garlic powder, salt, and pepper.
Cooking
- Place the chicken in a baking dish and bake for 25-30 minutes, or until cooked through.
- Remove from the oven and let it rest for a few minutes before serving.
Notes
Make sure to really pack the stuffing into the chicken pockets for full flavor. Let the stuffed chicken rest after cooking to keep it juicy and tender. Pair with a light salad or roasted vegetables.
