Ingredients
  

Truffle Base
  • 1 small small strawberry cake, crumbled
  • 1/2 cup smooth strawberry or vanilla frosting Use firm frosting for better binding.
  • 1/4 cup finely chopped fresh strawberries Optional for extra fruit flavor.
Coating
  • 1 cup white or pink candy melts or white chocolate Melt in microwave, stirring every 20 seconds.
  • optional sprinkles, small chopped freeze dried strawberry, or melted chocolate For decoration.

Method
 

Preparation
  1. Crumble one small strawberry cake into a large bowl, remove any big crumbs.
  2. Add 1/2 cup of smooth strawberry or vanilla frosting to the crumbs and mix until holds together.
  3. Optional: Stir in 1/4 cup finely chopped fresh strawberries.
  4. Using a cookie scoop or spoon, form seven 1-inch balls and place on a baking sheet lined with wax paper.
  5. Chill the balls in the fridge for 20 to 30 minutes to firm up.
Dipping and Finishing
  1. Melt 1 cup white or pink candy melts or white chocolate in a microwave safe bowl.
  2. Dip each chilled ball into the melted coating with a fork, lift, and tap off extra coating.
  3. Place back on the wax paper and add optional decorations if desired.
  4. Chill again for 10 minutes to set the coating.

Notes

Chill the balls well before dipping to prevent falling apart. Store leftovers in the fridge in a single layer.
