Champagne Vinaigrette
  • 1/4 cup champagne vinegar Can be substituted with white wine vinegar.
  • 1/2 cup olive oil
  • 1 tablespoon honey Adjust based on the sweetness of the strawberries.
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Preparation
  1. Start by cleaning and drying the mixed greens.
  2. Hull and slice the strawberries.
  3. In a large bowl, toss together the greens and sliced strawberries.
  4. Add your chosen crunchy element, and thinly sliced red onion or scallions if desired.
Making the Vinaigrette
  1. In a separate bowl, whisk together the champagne vinegar, olive oil, honey, Dijon mustard, salt, and pepper.
  2. Taste and adjust the sweetness or acidity as needed.
Serving
  1. Pour the vinaigrette over the salad just before serving.
  2. Toss gently and sprinkle the crunchy topping on last to keep it crisp.
  3. Serve immediately for the best texture and flavor.
