  • 1/4 cup fresh cilantro, chopped Can substitute with parsley if desired.
  • 2 tablespoons lime juice Fresh lime juice is recommended.
Seasoning

Method
 

Preparation
  1. Cook the corn in boiling water until tender, about 10 minutes.
  2. Let the corn cool, then slice the kernels off the cob.
  3. In a large bowl, combine the corn, diced tomatoes, bell pepper, red onion, and cilantro.
  4. Drizzle with lime juice and season with salt and pepper to taste.
  5. Toss everything together until well combined.

Notes
