  • 2 tablespoons vegetable oil For cooking.
  • 1/4 cup cornstarch For coating the chicken to achieve a crispy texture.
  • Salt and Pepper To taste for seasoning the chicken.
  • 2 green onions, sliced For garnish and a fresh flavor.
  • 1 tablespoon sesame seeds For garnish and a nutty crunch.
  • Rice or Noodles For serving (jasmine rice, basmati rice, or noodles of your choice).

Preparation
  1. Cut the chicken breasts into bite-sized pieces.
  2. In a mixing bowl, combine sweet chili sauce, soy sauce, minced garlic, and minced ginger.
  3. Add the chicken pieces to the marinade, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes.
Coating the Chicken
  1. In another bowl, place the cornstarch and season lightly with salt and pepper.
  2. Remove marinated chicken and dredge each piece in the cornstarch.
Cooking the Chicken
  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add coated chicken pieces in a single layer and cook for about 4-5 minutes on each side until golden brown.
  3. Once cooked, transfer chicken to a plate lined with paper towels to drain excess oil.
Glazing the Chicken
  1. In the same skillet, reduce heat to medium and add the remaining marinade to the pan.
  2. Bring it to a simmer, then add the fried chicken back into the skillet and toss until well coated.
  3. Adjust seasoning of the glaze as necessary before serving.
Serving
  1. Transfer the glazed Sweet Chili Chicken to a serving platter.
  2. Garnish with sliced green onions and sesame seeds.
  3. Serve over jasmine rice, basmati rice, or your favorite noodles.

Notes

To enhance flavor, consider adding vegetables during glazing and serve with lime wedges for a fresh touch.
