Preparation
- Cut the chicken breasts into bite-sized pieces.
- In a mixing bowl, combine sweet chili sauce, soy sauce, minced garlic, and minced ginger.
- Add the chicken pieces to the marinade, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes.
Coating the Chicken
- In another bowl, place the cornstarch and season lightly with salt and pepper.
- Remove marinated chicken and dredge each piece in the cornstarch.
Cooking the Chicken
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add coated chicken pieces in a single layer and cook for about 4-5 minutes on each side until golden brown.
- Once cooked, transfer chicken to a plate lined with paper towels to drain excess oil.
Glazing the Chicken
- In the same skillet, reduce heat to medium and add the remaining marinade to the pan.
- Bring it to a simmer, then add the fried chicken back into the skillet and toss until well coated.
- Adjust seasoning of the glaze as necessary before serving.
Serving
- Transfer the glazed Sweet Chili Chicken to a serving platter.
- Garnish with sliced green onions and sesame seeds.
- Serve over jasmine rice, basmati rice, or your favorite noodles.
Notes
To enhance flavor, consider adding vegetables during glazing and serve with lime wedges for a fresh touch.
