Ingredients
  

Main Ingredients
  • 1 lb ground beef Use lean ground beef for a healthier option.
  • 1 packet taco seasoning Choose your favorite brand.
  • 3/4 cup water For mixing with taco seasoning.
  • 2 cups salsa Adjust spiciness based on preference.
  • 4 large flour tortillas Can substitute with corn tortillas for gluten-free.
  • 1 can (15 oz) black beans, drained and rinsed Adds fiber and protein.
  • 1 can (15 oz) corn, drained Sweet corn works best.
  • 2 cups shredded cheddar cheese Feel free to mix with other cheeses.
  • 2 cups shredded Monterey Jack cheese For a creamy taste.
  • 1 cup sour cream Use for topping.
  • 1/4 cup chopped fresh cilantro For garnish.
  • 2 tablespoons sliced green onions Optional for garnish.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef until fully browned. Drain any excess fat.
  3. Add taco seasoning and water to the cooked beef, stirring until well combined. Allow to simmer for about 5 minutes or until slightly thickened.
  4. Stir in salsa and let the mixture cook for an additional 2 minutes.
  5. In a separate bowl, mix together the black beans and corn.
Assembly
  1. Spread a thin layer of the beef mixture across the bottom of a 9x13 inch baking dish.
  2. Place a tortilla over the beef mixture, ensuring it covers the bottom of the dish evenly.
  3. Spread a layer of the black bean and corn mixture over the tortilla.
  4. Sprinkle a layer of cheddar and Monterey Jack cheese over the bean mixture.
  5. Repeat the layering process: beef mixture, tortilla, black bean and corn mixture, and cheese until all ingredients are used, finishing with a layer of cheese on top.
Baking
  1. Cover the dish with aluminum foil and bake in the preheated oven for 25-30 minutes.
  2. Remove the foil and bake an additional 10 minutes until the cheese is bubbly and golden brown.
  3. Remove from oven and let the dish cool for 5 minutes.
Serving
  1. Top with sour cream, cilantro, and green onions before serving.
  2. Slice into squares and serve hot, optionally with tortilla chips and guacamole.

Notes

Customize with your favorite toppings and enjoy as leftovers. Can be prepared in advance and baked later.
