Preparation
  1. In a bowl, combine the water and salt, stirring until the salt dissolves.
  2. Place the carrot sticks in a clean, quart-sized jar. If using, add dill seeds, garlic, and bay leaf.
  3. Pour the saltwater mixture over the carrots, ensuring they are fully submerged. You can use a clean weight (like a smaller jar) to keep them down if needed.
  4. Cover the jar loosely with a lid or cloth to allow gases to escape.
  5. Leave the jar at room temperature for 3-7 days, checking daily for taste and ensuring the carrots remain submerged.
  6. Once they reach your desired tanginess, seal the jar tightly and store it in the refrigerator.

Notes
