- In a bowl, mix tuna, mayonnaise, mustard, lemon juice, onion, celery, salt, and pepper. Taste and adjust seasoning.
- Lay a tortilla flat. Put half the tuna salad in the middle. Top with some cheese, tomato slices, and spinach.
- Fold the sides of the tortilla, then roll it up tight into a wrap. Repeat with the second tortilla.
Cooking
- Heat a skillet over medium heat. Add a little butter or oil.
- Place the wraps seam side down in the hot pan. Cook 2 to 3 minutes on each side, pressing lightly with a spatula until the tortilla is golden and the cheese melts.
- Remove from the pan, let the wrap sit one minute, then slice in half and serve warm.

Tips for success: Drain the tuna well to keep the wrap from getting soggy. Use cheese that melts easily. Heat the pan first for a nice, golden crust. Add a touch of lemon or pickle juice for brightness. For spice, mix in hot sauce or chopped jalapeƱo.
