  • 2 cans cans (15 oz each) white cannellini beans, rinsed and drained
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh spinach or kale, optional
  • Fresh parsley, for garnish

Method
 

Cooking
  1. In a large pot, heat olive oil over medium heat.
  2. Add the onion, carrots, and celery, cooking until softened, about 5-7 minutes.
  3. Stir in the garlic, and cook for another 1 minute until fragrant.
  4. Add the vegetable broth, thyme, oregano, and beans. Bring to a boil, then reduce the heat and let it simmer for about 20 minutes.
  5. If using, add spinach or kale and let it wilt for a few minutes.
  6. Season with salt and pepper to your taste.
  7. Serve hot, garnished with fresh parsley.

Notes

For best results, use fresh herbs and consider blending a portion of the beans for a creamier texture. Adjust seasoning based on the vegetable broth's salt level.
