- In a large pot, heat olive oil over medium heat.
- Add the onion, carrots, and celery, cooking until softened, about 5-7 minutes.
- Stir in the garlic, and cook for another 1 minute until fragrant.
- Add the vegetable broth, thyme, oregano, and beans. Bring to a boil, then reduce the heat and let it simmer for about 20 minutes.
- If using, add spinach or kale and let it wilt for a few minutes.
- Season with salt and pepper to your taste.
- Serve hot, garnished with fresh parsley.
Notes
For best results, use fresh herbs and consider blending a portion of the beans for a creamier texture. Adjust seasoning based on the vegetable broth's salt level.
