Ingredients
  

For the marinade
  • 1 lime 1 lime, juiced
  • 2 tablespoons 2 tablespoons olive oil
  • 1 tablespoon 1 tablespoon honey
  • 2 cloves 2 cloves garlic, minced
  • to taste Salt and pepper to taste
Main ingredients
  • 2 pieces 2 boneless, skinless chicken breasts
  • 2 pieces 2 ripe California avocados Choose ripe avocados for creaminess.
  • for garnish Fresh cilantro for garnish (optional)

Method
 

Preparation
  1. In a bowl, mix lime juice, olive oil, honey, garlic, salt, and pepper to create the marinade.
  2. Place the chicken in a resealable bag and pour the marinade over it. Seal the bag and let it marinate for at least 30 minutes, or overnight for the best flavor.
Cooking
  1. Preheat the grill to medium-high heat.
  2. Remove the chicken from the marinade and grill for about 6-7 minutes on each side or until fully cooked.
Assembling
  1. While the chicken is grilling, cut the avocados in half, remove the pits, and scoop out a little bit to make room for the chicken.
  2. You can mix the avocado with a bit of lime juice and cilantro for extra flavor.
  3. Once the chicken is grilled, place it inside the avocado halves and drizzle any remaining marinade over the top.
