Preparation
- In a skillet over medium heat, cook the ground turkey until browned.
- Add diced onions, minced garlic, and your favorite seasonings, and stir until fragrant.
- In a separate bowl, mash the cooked sweet potatoes with butter, salt, and pepper until smooth.
Assembly
- Layer the turkey mixture in a baking dish.
- Spread the sweet potato mash on top of the turkey mixture.
- Sprinkle shredded cheddar cheese over the sweet potato layer.
Baking
- Bake in a preheated oven until heated through and cheese is golden, about 25-30 minutes.
Notes
The casserole can be prepared a day in advance and stored in the fridge before baking. Leftovers can be stored for up to 3 days.
