  • 4 cups beef broth

  • 2 chopped potatoes You can substitute with sweet potatoes or parsnips.
  • 1 chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon salt Adjust to taste.
  • 1 teaspoon black pepper Adjust to taste.
  • optional thyme or bay leaves Add for extra flavor.

Preparation
  1. Place a large pot or Dutch oven over medium heat. Add a little oil and throw in the beef pieces. Brown them on all sides, which takes about 5-7 minutes.
  2. Once the beef is brown, remove it from the pot and set it aside.
  3. In the same pot, add the chopped onion and garlic. Sauté them for a few minutes until they are soft.
  4. Add the chopped carrots and potatoes, stirring them together.
  5. Return the beef to the pot along with the beef broth, salt, black pepper, and any herbs you choose.
Cooking
  1. Bring the mixture to a boil, then cover and reduce the heat. Let it simmer for about 1.5 to 2 hours, stirring occasionally, and check if the beef is tender.
Serving
  1. Serve in deep bowls or cauldrons, especially if it's Halloween.
  2. Pair with crusty bread or buttery rolls, and garnish with fresh parsley.

Notes

For deeper flavor, consider adding a splash of red wine to the stew after browning the beef. Let the stew sit for a bit after cooking to enhance flavors. This stew tastes even better the next day, so cook extra to enjoy later.
