Ingredients
  

Dry Ingredients
  • 2 cups all purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
Wet Ingredients
  • 2 large eggs
  • 1 3/4 cups eggnog
  • 1/2 cup milk
  • 1/3 cup melted butter, cooled
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your waffle iron and heat it according to the maker instructions.
  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, nutmeg, and cinnamon.
  3. In another bowl, beat the eggs and stir in the eggnog, milk, melted butter, and vanilla extract.
  4. Pour the wet mixture into the dry mixture and stir until just combined, being careful not to overmix. A few small lumps are okay.
  5. Lightly oil the waffle iron and pour batter onto the hot iron. Cook until the waffles are golden and crisp.
  6. Keep cooked waffles warm in a low oven while you make the rest.
Serving
  1. Serve waffles with maple syrup, whipped cream, or a dusting of extra nutmeg.

Notes

Do not overmix the batter to keep waffles light. Make sure your waffle iron is hot for a crisp texture. You can add more milk if the batter seems thick.
