- Preheat your waffle iron and heat it according to the maker instructions.
- In a large bowl, whisk together the flour, sugar, baking powder, salt, nutmeg, and cinnamon.
- In another bowl, beat the eggs and stir in the eggnog, milk, melted butter, and vanilla extract.
- Pour the wet mixture into the dry mixture and stir until just combined, being careful not to overmix. A few small lumps are okay.
- Lightly oil the waffle iron and pour batter onto the hot iron. Cook until the waffles are golden and crisp.
- Keep cooked waffles warm in a low oven while you make the rest.
Serving
- Serve waffles with maple syrup, whipped cream, or a dusting of extra nutmeg.
Notes
Do not overmix the batter to keep waffles light. Make sure your waffle iron is hot for a crisp texture. You can add more milk if the batter seems thick.
